Ingredients
- 1/4 cup olive oil
- 6 medium potatoes, cut into half and slices.
- 1 large chopped white onion
- 7 large eggs
- Salt and pepper
- Oil to fry potatoes
Let's do it!
Heat 2 tablespoon olive oil in a pan. Add the chopped onion and cook till it gets golden. Fry potatoes in a deep fry pan with canola oil or grape seeds oil until crispy, golden and tender. When it’s ready drain oil with a metal colander.
In a bowl beat eggs with salt and pepper, add the golden onion and crispy potatoes.
Mix everything
Pour 2 tablespoon of olive oil in a deep pan over medium heat.
Pour mixture into the pan moving it gently that eggs will cover slightly the potatoes.
Cook for approximately 7 minutes.
Take a plate that its diameter will be slightly larger than the pan diameter, place it
Upside down on the pan, put your hand on the back of the plate and flip it together with the pan so the tortilla will now be on the plate, put back the pan on the stovetop and slide gently the tortilla in the pan (not cooked side will be on the pan) cook it for 4 more minutes.
Take a clean plate place it on top of the tortilla and flip it over.
