Ingredients
- 1/2 cup olive oil
- 5 medium potatoes, cut into half-inch pieces.
- 1 large chopped white onion
- 6 large eggs
- Salt and pepper
- Oil to fry potatoes
Let's do it!
preheat oven 380 F Degree
in a pan over medium-high add 2 tablespoon olive oil.
Add the chopped onion and cook till it gets golden.
Fry potatoes in a deep fry pan with canola oil or grape seeds oil until crispy, golden and tender. When it’s ready drain oil with a metal colander.
In a bowl beat eggs with salt and pepper, add the golden onion and crispy potatoes.
Mix everything
Pour 1 tablespoon of olive oil in each ramekin and make sure the oil covers the sides as well if it’s necessary to add more oil.
Pour mixture into the ramekins moving it gently that eggs will cover slightly the potatoes.
Insert the ramekins to the heated oven, cook for approximately 20 minutes. Make sure the egg has been cooked.
To remove the tortilla from the ramekins, run a small knife around the edge of each ramekin to loosen
Place a clean plate on top of the tortilla and flip
