Ingredients

  • 1 sweet potato — peeled and cut into small cubes
  • 1 cup canned brown lentils rinsed and drained
  • 1 cups baby spinach cut
  • 1 red pepper cut to small cubes
  • 1 sliced green onion
  • 1 cucumber cut to small cubes

 

Dressing ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic — minced
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon balsamic glaze

Let's do it!

Preheat the oven to 450°F

Toss the sweet potato with 1 tablespoon of the olive oil. Bake for 30 minutes

Place 3 tablespoons of olive oil in a bowl with the garlic, lemon juice, salt, and pepper and whisk to combine.

Place the roasted sweet potato in a salad bowl with all rest ingredients Add the dressing and toss gently to combine.
