Ingredients
- 1 sweet potato — peeled and cut into small cubes

- 1 cups baby spinach cut
- 1 red pepper cut to small cubes
- 1 sliced green onion
- 1 cucumber cut to small cubes
Dressing ingredients:
- 2 tablespoons extra virgin olive oil
- 1 clove garlic — minced
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon balsamic glaze
Let's do it!
Preheat the oven to 450°F
Toss the sweet potato with 1 tablespoon of the olive oil. Bake for 30 minutes
