Ingredients
- 3.5 cups white flour
- 1 tablespoon dry yeast
- ½ tablespoon white sugar
- 1.5 warm water
- 2 tablespoon olive oil
- ½ tablespoon salt
- Canola oil for frying (3 cups)
Filling ingredients :
- Boiled eggs sliced
- Tuna (in a can)
- Tomatoes and cucumbers salad
- Arugula leaf
- Green or black olives sliced
- Pickles sliced
- Hot sauce (Harissa)
- Salt and pepper to taste
Let's do it!
In a small bowl place the yeast, sugar and warm water (not hot), let the yeast rise for 5 minutes.
In a large mixer bowl place the flour, oil and mix it, gradually add the water with yeast.
Add the salt and keep kneading for 8-10 minutes.
Sprinkle a little olive oil on top and cover the bowl with the dough with cling wrap and a towel.
Let the dough rise for 1 hour till it doubles its size.
Lightly knead the dough with your hands and cover it again for another 30 minutes.
Place the dough on a floured surface and divide it 10 pieces, with a rolling pin flat a little bit each piece to an oval shape.
Cut parchment paper into 10 pieces 8”x6” and place each bun on it. Let it rise for 30 minutes.
In a deep pan heat the frying oil on medium-high heat.
Place one bun with the parchment paper (or two if the pan is large enough) in the pan and when the parchment paper release from the bun remove it from the pan, let it fry each side for about 2 minutes till it gets golden, the bun will rise during frying.
Place the bun on a paper towel to absorb the oil.
Cut the bun along and fill it with filling ingredients.
