Dough Ingredients

  • 3¾ cups (530 g/18.7oz) all-purpose flour, plus extra for dusting
  • ½ cup (100 g/3.5oz) granulated sugar
  • 1 tablespoon (10g) instant yeast
  • 2 large eggs
  • 1 cup (120 m) water
  • 1/4  teaspoon fine sea salt
  •  1 tablespoon olive oil/canola oil
  • 1 teaspoon vanilla extract

Nutella chocolate spread or

  • ½ cup (50 g/1.7oz) powdered sugar
  • ⅓ cup (30 g/1oz) unsweetened cocoa powder
  • 130 g (4 oz) dark chocolate
  • ½ cup (120 g/4oz) unsalted butter, melted

 

For the sugar syrup:

  • ½ cup (120ml) water
  • ½ cup (100g) granulated sugar
  • In a small saucepan over medium heat, bring water and sugar to a boil. when the sugar dissolves, remove from heat and set aside to cool.

Let's do it!

  • Dough: Place flour, sugar, and yeast in a standing mixer and mix on low speed until combined. Add eggs and water, and mix on medium speed until the dough comes together 2-3 minutes. Add salt, then butter, adding a few cubes at a time. Continue mixing for about 8 minutes on medium speed, until dough is completely smooth.
  • Place dough in a large bowl brushed with oil, cover with plastic wrap, and leave in a warm place for one and a half hours.
  • Grease two loaf pans with oil and lines the bottom of each pan with parchment paper. Divide dough in half.
  • Making the filling: Whisk together powdered sugar, cocoa powder, chocolate, and butter until you have a spreadable paste.
  • Roll out dough on a lightly floured surface and shape into a rectangle. place the dough so that a long side is closest to you. spread half of the chocolate mixture over the rectangle, leaving a small border all around.
  • Roll up the rectangle like a roulade, starting from the long side closest to you and ending at the other long end. Press to seal the end onto the roulade,
  •  use a knife to gently cut the roll in half lengthwise, starting at the top and finishing at the seam, dividing into two long even halves, with the layers of filling visible along the length of both halves.  lift the right half over the left half. Repeat this process.
  • Gently squeeze together the ends, showing the filling on top. Carefully lift the cake into a loaf pan.  Cover the pan loosely with plastic wrap and leave to rise in a warm place for 45 minutes. Repeat to make the second cake.
  • Preheat oven to 375°F, Remove plastic wrap, place cakes on the middle rack of the oven, and bake for about 25-30 minutes until a skewer inserted into the center comes out clean.
  • Make the syrup. In a small saucepan over medium heat, bring water and sugar to a boil. As soon as the sugar dissolves, remove from heat and set aside to cool. As soon as the cakes come out of the oven, brush the syrup over them.  Serve at room temperature.
