- 6 chicken drumstick and 8 chicken wings
- 2 onions, sliced
- 4 medium, sliced potatoes
- 2 medium sweet potatoes, sliced
- Dried parsley
- For the marinade:
- 4 cloves of garlic
- A quarter cup of canola oil
- A quarter cup of olive oil
- A quarter cup of boiling water
- 2 tablespoon of paprika
- 1 Teaspoon cumin
- 1/2 teaspoon of turmeric
- 1 tablespoon onion soup powder
- 1 Teaspoon of salt
- 1/2 teaspoon of black pepper
Let's do it!
Description
Clean and dry the chicken well (to allow the marinade to stick to it).
Make the marinade: In a large bowl, mix the garlic, both types of oil and spices.
Put the chicken in and massage it well in the marinade. Let it stay in the marinade half an hour to a few hours ( in the fridge).
Preheat oven to 390f degrees.
Arrange the onion slices at the bottom of the casserole. Remove the chicken from the marinade and arrange on the onion.
Add the slices of potato and sweet potato to the marinade bowl and mix well. pour the leftover marinade. If desired, sprinkle with dry parsley.
Wrap the casserole well in foil and put in the oven for half an hour.
Open, and with a spoon, wet the chicken, potatoes, and sweet potatoes in the liquid. Reduce oven heat to 370 f degrees, cover again and roast for another 45 minutes.
Remove the foil and moisten the chicken, potatoes, and sweet potatoes again. Put in the last 10 minutes of roasting, until the chicken turns golden.
