- 4 large eggs
- 4 cups fresh spinach
- 1 chopped onion
- 1/2 cup Parmesan cheese
- 1/2 cup mozzarella shredded cheese
- 1 tablespoon olive oil
- 2 tablespoon cottage cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Let's do it!
Preheat oven to 375°F. Grease or spray a tin for 12 muffins.
In a medium frying pan, heat the oil over medium heat. When hot, add onions and saute until softened and golden, about 3 minutes, stirring occasionally. Add spinach and stir gently until wilted. Remove from heat.
in a large bowl, whisk together eggs, cheeses, salt, and pepper.
Add to the bowl of eggs and cheese the cooked spinach and onion and mix well
Grease the muffin tray with olive oil and pour the mixture into the tray.
Bake for 20-25 minutes or until puffed up and golden brown.
Leave the frittatas in the tray for about 5 minutes before removing and serving.
