Ingredients
Fish Ingredients:
- 1 filet of Whitefish – Cod / Tilapia / Haddock / Halibut cut in bite pieces
- 1/2 cup all-purpose flour
- 1 tablespoons cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup beer
- 3 tablespoon chopped fresh parsley
- 1-quart oil for frying
Filling ingredients :
- 2 corn tortillas
- 1/4 cup mayonnaise
- 1/2 lime, juiced
- 1 tablespoon glazed basmati
- 1 jalapeno pepper, minced
- 1/2 Avocado
- 1/4 small head cabbage, finely shredded
- 1 small tomato cut to small cubes
- 2 chopped green onion
- 2 radish sliced
Let's do it!
In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture. Add the chopped parsley.
Heat oil in deep-fryer to 375 degrees F (190 degrees C).
Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels.
To serve, place fried fish in a tortilla and top with shredded cabbage, jalapeno, avocado, tomato, green olive, radish and add mayonnaise and glazed basmati sauce.
